Grilled Goat's Cheese, Strawberry & Pine Nut Salad with Basil & Balsamic Dressing

A summer favourite and taste department original salad

As Joey once said, "that's like summer in a bowl" 🍓We're currently loving the local strawberries in Finland and this one is easy, fresh and tasty.


Ingredients

  • Strawberries (ideally farmers market)

  • Goat cheese wheel

  • Arugula (rocket)

  • Lambs lettuce

  • Pine nuts

  • Basil

  • Balsamic vinegar

  • Olive oil

  • Salt & pepper

Step-by-Step

  1. Dry roast pine nuts for 2-3 mins on a small saucepan on medium heat. Continuously toss and watch closely to avoid burning. You want pine nuts to be golden brown. Leave them aside in a separate bowl.

  2. Chop strawberries into quarters and leave aside.

  3. Toss your greens together with the strawberries, pine nuts, roughly torn basil, balsamic vinegar, olive oil, salt & pepper.

  4. Throw a goat's cheese wheel on a grill on high-heat and grill about 4 minutes until it is gooey on the inside. When ready, place it on top of your salad and voila!

Notes

  • If you don't have a grill, you can pan fry or oven roast the goat's cheese.
