A summer favourite and taste department original salad
As Joey once said, "that's like summer in a bowl" 🍓We're currently loving the local strawberries in Finland and this one is easy, fresh and tasty.
Ingredients
Strawberries (ideally farmers market)
Goat cheese wheel
Arugula (rocket)
Lambs lettuce
Pine nuts
Basil
Balsamic vinegar
Olive oil
Salt & pepper
Step-by-Step
Dry roast pine nuts for 2-3 mins on a small saucepan on medium heat. Continuously toss and watch closely to avoid burning. You want pine nuts to be golden brown. Leave them aside in a separate bowl.
Chop strawberries into quarters and leave aside.
Toss your greens together with the strawberries, pine nuts, roughly torn basil, balsamic vinegar, olive oil, salt & pepper.
Throw a goat's cheese wheel on a grill on high-heat and grill about 4 minutes until it is gooey on the inside. When ready, place it on top of your salad and voila!
Notes
If you don't have a grill, you can pan fry or oven roast the goat's cheese.
