Charred Chicken & Burst Cherry Tomato Salad with Feta & Lemon + Dijon Mustard Vinaigrette

Pay attention if you want a fool-proof chicken marinade

This olive oil, balsamic vinegar, fresh thyme, garlic, cayenne & honey marinaded chicken fired up on the grill turned out to be a juicy & flavourful dream. We were actually dancing with each mouthful.


Ingredients

  • Chicken breast

  • Olive oil

  • Balsamic vinegar

  • Fresh thyme

  • Garlic

  • Cayenne

  • Honey

  • Cherry tomatoes

  • Lemon zest

  • Basil

  • Salt

  • Pepper

  • Mixed greens

  • Dijon mustard

  • Lemon juice

Step-by-Step

  1. Marinade the chicken in olive oil, balsamic vinegar, fresh thyme, garlic, cayenne, lemon zest & honey. Leave in the fridge for at least an hour.

  2. Toss the cherry tomatoes with garlic, olive oil, lemon zest & basil.

  3. Fire up the grill and grill the chicken until charred and juicy on the inside (for us, about 10 mins). Also grill the marinaded cherry tomatoes on top of a sheet of foil.

  4. Toss together your mixed greens and dress with dijon mustard, lemon juice, olive oil, salt & pepper.

  5. Top the salad with the chicken and cherry tomatoes.
