Pay attention if you want a fool-proof chicken marinade
This olive oil, balsamic vinegar, fresh thyme, garlic, cayenne & honey marinaded chicken fired up on the grill turned out to be a juicy & flavourful dream. We were actually dancing with each mouthful.
Ingredients
Chicken breast
Olive oil
Balsamic vinegar
Fresh thyme
Garlic
Cayenne
Honey
Cherry tomatoes
Lemon zest
Basil
Salt
Pepper
Mixed greens
Dijon mustard
Lemon juice
Step-by-Step
Marinade the chicken in olive oil, balsamic vinegar, fresh thyme, garlic, cayenne, lemon zest & honey. Leave in the fridge for at least an hour.
Toss the cherry tomatoes with garlic, olive oil, lemon zest & basil.
Fire up the grill and grill the chicken until charred and juicy on the inside (for us, about 10 mins). Also grill the marinaded cherry tomatoes on top of a sheet of foil.
Toss together your mixed greens and dress with dijon mustard, lemon juice, olive oil, salt & pepper.
Top the salad with the chicken and cherry tomatoes.
