A fool-proof, simple and satisfying cod recipe.
Cod is the most versatile white fish in our opinion. It works well with minimal seasoning as well as lots of seasoning and it isn’t too fishy. You’ll see cod featured in quite a few of our recipes.
We learned this recipe from a superstar mum. It’s fool-proof, simple and works well in all occasions (we’re currently on a sail boat sailing our way through the Finnish archipelago).
Ingredients
Cod fillet
Cherry tomatoes
Olive oil
Herbs (we used dill & chives)
Salt
Citron pepper
Black pepper
Step-by-Step
Set the oven at 180°C
Season the cod with olive oil, salt, citron pepper, black pepper and your favourite herbs
Place the cod in a baking dish, scatter some cherry tomatoes around it and pop it in the oven at 180°C for 15-20 mins depending on how thick your fish is
For sides, we boiled some fresh new potatoes in water with lots of dill and sauteed broccolini with olive oil, sea salt & chilli flakes.
