Soba Noodles with Salmon, Mushrooms, Broccoli & Edamame

Nutritious and delicious

Lockdown has had us craving Japanese food that we would otherwise be dining out for. We haven’t yet perfected our sushi skills but we are edging near perfect with our salmon soba noodles. We can confirm it hits the spot when you’re craving Japanese.


Ingredients

  • Salmon

  • Soba noodles

  • Soy sauce

  • Sambal olek (or sriracha)

  • Sesame oil

  • Rice vinegar

  • Mirin

  • Garlic

  • Ginger

  • Miso paste

  • Lime juice

  • Broccoli

  • Mushroom

  • Edamame

  • Spring onions

  • Coriander

  • Sesame seeds

  • Salt


Step-by-Step

  1. Marinate the salmon with soy sauce, sambal olek (or sriracha), sesame oil, rice vinegar, mirin, garlic, ginger and sesame seeds. Let it sit in the fridge for at least 30 mins.

  2. While you're waiting, cook your soba noodles according to package directions. Leave aside to cool.

  3. Mix together a miso-lime sauce and use it to sauté broccoli, mushrooms and edamame.

  4. Toss together the soba noodles and vegetables and top with the salmon, spring onions, coriander & sesame seeds.

We used this recipe but made a few tweaks by adding lime to the sauce and omitting maple syrup & sugar.


Tips

  • If you have a bit of a sweet tooth, add maple syrup or sugar to the salmon marinade
