The ultimate comfort food


This combo really hits the spot when you're craving comfort food and is also PERFECT to make when you are hosting a big dinner for 6-8+ guests. Pasta alla norma is a classic Sicilian dish that tends to always be a crowdpleaser. Our favourite recipe is from Simple by Ottolenghi.


Ingredients

  • Garlic

  • Chilli

  • Aubergine (eggplant)

  • Fresh oregano sprigs (or thyme)

  • Whole peeled tomato cans

  • Spaghetti

  • Salt

  • Pepper

  • Caster sugar

  • Olive oil

Tips

  • Boil your pasta in your largest pot and fill it 3/4ths full with water and 3TBSP of salt. It seems like a lot but this is how you get every noodle perfectly seasoned. The water should taste like salty seawater.

  • ALWAYS save a cup of pasta water when making pasta (it’s can be a life saver)

  • Peel the skin of your aubergines in long alternating strips before seasoning them and popping them in the oven to avoid soggy aubergines (eek!)

  • If you can't find fresh oregano, substitute with thyme
